There is something that is nice about a quick and easy, but flavor-packed vegetable dish that you can whip in no time on a work night, or serve it at a dinner party with almost zero prep. Pretty heathy, worthy of meal prepping, and a great side to go with grilled chicken, steak, or seafood.
Ingredients
1 Lb Asparagus, trimmed and cleaned
3-4 Garlic Cloves
1 Lemon
3 Tbs Quality Olive Oil
Cracked Black Pepper
Kosher Salt
Step 1 - Preheat your oven broiler on high. Meanwhile, bring your steamer pot to an aggressive steam.
Step 2 - Stuff a lemon with a few gloves of garlic, stick it under the broiler and burn the hell out of it. It should take 7-10 minutes.
Step 3 - Steam asparagus for 45 seconds then shock it in ice water to lock in the vibrant green color. Remove from ice water onto towels. Pat to dry.
Step 4 - Squeeze half the burnt lemon on the asparagus and drizzle with quality olive oil, salt, and pepper.
Step 5 - Throw the dressed asparagus back under the broiler until the tips get brown and crispy to your liking. 6-10 Minutes.
Step 6 - Serve with the other half of the lemon for people who like that extra lemon factor.
